Manual Cold Pastry Forming/Blocker
Cold pastry forming or cold dough blocking, is faster than sheeting and best for most pie and tart shell production. It is also suited for cold forming other food products like hamburger patties.

Limitations:
Unlike our Pneumatic Blocker, the product is not air released. As such, a barrier in the form of wax paper, sandwich wrap or plastic wrap is required between the pastry/dough and the tooling to prevent sticking. These are both a simple yet quick and an effective solution, where the non-stick barrier is easily peeled off and re-used; The result being consistently similar to what is achieved with our Pneumatic Blocker.
For now, product is limited to round pies or product up to a maximum diameter of 240 mm or 9,4″ (inches)

Our Manual Cold Blocker is suited to low, medium and even high volume production operations of small pies, tart shells as well as large family pies; Production capacity of 280 pies per hour or 2800 pies per day is possible depending on product size. Organisational optimisation is key to workflow. Where the output of the machine is calculated by it’s cycle time in producing a “part” and includes the loading and unloading. When your supply to the machine is optimised, and production is sufficiently staffed (2-4 persons depending on menu size, ), the output capacity of our Manual Cold Blocking Machine is surprisingly high and can exceed 300 pies per hour.
